This recipe is great for making ahead, keep the parts seperate in the fridge and build the bowl in the morning!
Ingredients
1 1/2 cups of cooked farro
1 package of Duncan Farms Sausage Patties, cooked and roughly chopped.
2 Red Bell Peppers (for roasting)
4 green onions, thinly sliced
6, soft cooked Duncan Farm eggs
Optional: Your favorite hot sauce for dressing
Directions
Farro: Know what kind of farro you have purchased. Grocery stores usually sell 3 types of farro all with different cooking times, anywhere from 15-40 minutes. If you aren't sure which kind you have, start tasting for doneness at 15 minutes. It should be the texture of cooked rice or quinoa ( tender, but with an al dente bite is best)
In a tight mesh strainer/sieve, rinse 1 cup of uncooked farro with cold water. Fill a medium pot half full of water and bring to a boil. Add the farro, reduce the heat and simmer until the farro is tender and chewy. (15-20 minutes for pearled farro, 20-30 minutes for semi-pearled, and 40 minutes for whole).
Drain, then spread on a large plate or sheet pan and dry for 20 minutes, this keeps it from overcooking.
Soft Boiled Eggs
Boil a medium pot of water over high heat. Reduce heat to medium to maintain a gentle boil.
Add eggs with a slotted spoon, and let them simmer for 7 minutes.
While eggs are boiling prepare a bowl of ice water. After the eggs have cooked for 7 minutes, put them into the ice water and let them chill for at least 3 minutes. Peel eggs before using them.
Sausage Patties
Preheat oven to 350, and place Duncan Farms sausage patties on a baking sheet. Bake for 18-20 minutes or until internal temperature reaches 165 ( they can be cooked in a skillet or frying pan, but we like how easy the oven bake is). Roughly chop cooked sausage.
Roasted Red Peppers
Slice red peppers in half and remove seeds. Line a baking sheet with parchment paper and place peppers cut side down. Preheat oven to 475, and bake peppers for 40 minutes ( or until soft and lightly charred). Once cooled, peel off the skin, roughly chop the peppers and drizzle olive oil over them.
Assemble the Bowl
Place 1/2 cup of farro into a bowl, top with rough chopped sausages, 2 tablespoons of roasted red peppers, 2 tablsepoons of green onions and one egg sliced in half. Drizzle your favorite hot sauce over top for a kick of heat.
