Cabbage Rolls

Ingredients
10-12 Cabbage Leaves ( 1 small-medium cabbage)
1lb of ground chicken or Ground Pork or Ground Turkey Or Ground Beef
1 tbsp minced garlic
2 tsp of thyme
1/3 cup chopped onion
1 large egg
1 tsp salt
1 tsp chicken bouillon
1 tsp cracked pepper
1/3 cup of cooked rice
1/2 cup of diced onions
1 tsp thyme
2 tsp minced garlic
1/2 can of tomato sauce ( 15 ounce can halved)
1 tsp creole seasoning ( our personal favorite is Tony's).
1-2 tsp smoked paprika
2 cups of chicken broth

Directions
Tomato Sauce
Add oil to a large saucepan and bring to medium heat ( just enough oil to coat pan). Add onion, thyme, garlic, and cook until onions start to sweat.
Add tomato sauce, creole seasoning, and paprika. Stir frequently to prevent sauce from sticking. Add stock and bring to boil, then reduce to a simmer for about 15 minutes.
Cabbage Roll Assembly
Fill a large pot with water and bring to a boil.
Remove core of cabbage and remove leaves. Add raw cabbage leaves and boil for about 4-5 minutes or until leaves are just tender. Remove from stove, and place leaves in an ice bath to stop the cooking process.
Once they are cooled remove leaves from ice water.
In a large bowl, combine ground chicken, garlic, paprika, onions, egg, salt, white pepper, boullion and rice. Mix well.
In a 9x13 baking dish ladle in some of the tomato sauce, just to cover bottom.
Place about 1/4-1/3 cup of meat into the top center of each cabbage leaf. Roll from the top of the leaf down towards the stem, halfway down the roll, tuck in sides and continue to roll down. Place the roll into the sauced dish, seam side down. Repeat until all meat is used.
Ladle sauce over the rolls until they are almost fully covered. If you have extra cabbage leaves, place them on top of the rolls, cover in tinfoil and bake @350 for 45 minutes, or until tender.
Recipe Note
If you want to add a traditional Ukrainian flare to your cabbage rolls, add 4 tbsps of white vinegar to your water when cooking the cabbage rolls. When serving, squirt a little lemon juice and top with 1 tbsp of butter on each roll.
