David's Chicken and Feta Burger

Ingredients
1lb of Duncan Farms Ground Chicken
1/4 cup almond flour (AP flour works just as well)
1/3 cup of feta cheese
1 1/2 cups of chopped spinach
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
Oil for cooking (David uses peanut, but vegetable works too. He recommends not olive oil because the smoke point is much lower)
1-2 Japanese Murasaki Sweet Potatoes
1-2 tablespoons of coconut oil
1 teaspoon of garlic powder
Salt to taste

Directions
Chicken and Feta Burgers
Mix all ingredients in a bowl
Form into 4 patties, and place on a baking sheet. Put a thumb print in the middle to keep the burgers from shrinking as they cook. Let them set in fridge for 30 minutes. Please note, the moisture content is very high on this burger.
Sear in a hot cast iron pan or grill them on your BBQ. Cook 5-7 minutes each side or until internal temp is 165.

Here are a few toppings that go well with chicken burger patties:
Sliced dill pickles
Dijon mustard
Thinly sliced red onion
More Feta cheese!
Japanese Sweet Potato Fries
Preheat oven to 425.
Scrub potatoes, clean and cut them into desired shape--the thinner the cut the less time it will take to cut.
Place the cut sweet potatoes, oil, salt, garlic powder and pepper in a bowl. Toss to coat evenly.
Spread the potatoes in a single layer over a baking sheet.
Bake potatoes for 25-35 minutes, flipping after 15 minutes. Cook until evenly browned adnd cripsy.
