Deconstructed Stuffed Pepper Soup
With fall officially here and cooler nights, we thought a hearty soup was fitting to get cozy at home with the family.
Stuffed Pepper Soup
1lb of Duncan Farms ground beef
1 tbsp of olive oil
1 cup of diced onion
2 sweet peppers, diced OR 1 pint of Lunchbox Peppers from Duncan Farms diced
Optional; 1 jalepeno minced
4 cups of chicken stock
1,14oz can of tomato sauce
2,14oz cans diced tomatoes
2 tbsp of brown sugar
2 tsp of salt
3 tbsp of Duncan Farms taco seasoning
1 cup of uncooked long grain rice
Heat olive oil in a large saucepan over medium high heat. Add onion and peppers and cook for 3 minutes. Add ground beef and cook until fully browned.
Add chicken stock, tomato sauce, diced tomatoes, brown sugar, salt, taco seasoning and rice to the pot. Bring to a simmer, stirring often so rice doesn't stick to bottom of pot. Simmer for 30 mins, or when soup is nice and thick.
