Sweet Potato and Goat Cheese Boats

A great side or appetizer, these twice baked potatoes are super easy!
2 sweet potatoes, washed & halved lengthwise
1 tablespoon of oil, or enough to coat the potatoes
1/2 package of Humble Heart Goat Cheese
4 slices of bacon
1 tablespoon of milk
Salt & Pepper to taste
Chopped Green Onions
Wash potatoes, cut in half lengthwise.
Preheat oven to 350 and pierce the sweet potatoes with a fork in multiple places.
Rub potatoes with olive oil and place cut side down on a baking sheet.
Roast potatoes until they are fork tender, about 45 minutes. Take out of oven when ready, and let rest for 15 mins ( but keep oven on as we are twice baking them).
While your potatoes are cooking, slice up your bacon and fry it in a frying pan over medium high heat until crisp. Usually about 8-10 minutes.
Once the baked sweet potatoes have cooled enough to handle, scoop the flesh into a bowl so that the skins resemble little boats. Try and not damage the skin as we will be placing the mashed potatoes back into them.
Mash the potatoes until smooth. Add the milk, salt, pepper and half the bacon and half the goat cheese and stir just until blended. Spoon these mashed potatoes back into the skins and place them back in the oven. Cook for an additional 15 minutes, then take them out and use the other half of bacon and goat cheese to sprinkle across. Bake for another 5 minutes.
Garnish with green onions and enjoy!
