Goat Cheese Stuffed Chicken Burgers

These ground chicken burgers are sure to satisfy even those with a sworn allegiance to ground beef. The freshness of leaf lettuce, leek microgreens, and red onions balance the smoky spice of paprika, and the gooey goat cheese center rounds it all out.
When your dinner guests note the lack of cheese on top of their burger, invite them to give it a try despite their hesitation. They'll find all the melty cheese they desire hidden within the burger itself!
*Note: This recipe is also great with ground turkey, if that's your poultry of choice!
Ingredients

1 lb ground chicken or turkey
3/4 tsp smoked paprika
1 clove garlic, minced
2 green onions, minced
Kosher salt
Freshly ground black pepper
2 Tbsp extra virgin olive oil

1 container of Humble Hearts Plain Goat Cheese
4 of your favorite burger buns

1 package of leek microgreens
-
1 head of leaf lettuce
1/4 small red onion, thinly sliced

**Optional: 4 slices of bacon
Directions
If including bacon, cook 4 slices of bacon in a pan on a low heat. Cook to desired crispiness, and set aside to use as an extra fun burger topping.
(You can also cook your burgers in the leftover bacon fat!)
In a large bowl, combine poultry, paprika, garlic, and green onions, and season with salt and pepper. Divide mixture into 4 parts.
Divide each of the 4 parts in half, to make 8 total patties. (These should be thin; about half the thickness of the burger you want.)
Add a generous spoonful of Humble Heart Goat Cheese to the center of 4 of the patties.
Top each with 1 of the 4 remaining patties; press edges firmly to seal. (You'll go from 8 thin patties to 4 goat cheese stuffed patties)
In a large skillet over medium heat, heat oil. Once the pan is hot, add burger patties and cook, flipping once, until golden (around 8 minutes). Remove from heat and transfer patties to a plate.
Serve patties on your favorite buns, stacked high with lettuce, red onion, leek microgreens, and (optionally) bacon.
