Hearty Sausage Soup

Ingredients
1lb of Duncan Farms Mild Italian Sausage, cut into bite sized pieces
2 medium/large carrots, cut into bite sized pieces ( the thinner/smaller the cut the faster they will cook)
2 stalks of celery, cut into bite sized pieces ( the thinner/smaller the cut the faster they will cook)
3 medium leeks, white and pale green parts only ( you could sub a diced onion for this, but we prefer the richness of the leeks)
1 medium sized cabbage, or half a large cabbage. Rough chop into bite-sized pieces
3 cloves of garlic, minced
6 cups of chicken stock
1lb your favorite potates, diced
1 tbsp of Duncan Farms Italian Seasoning
Salt and pepper to taste
Directions
Add cut sausage to a large stock pot or dutch oven. Cook over medium-heat until cooked through, flip frequently, until crispy brown. Take out sausage. Add a tiny bit of olive oil to pan if needed.
Add leeks, carrots and celery to the pan, and stir to combine. Sauté for 5-10 minutes, stirring occasionally, until carrots begin to soften.
Add cabbage and garlic and cook for 4-5 minutes, until cabbage starts to wilt.
Add chicken stock, potatoes, Italian seasoning, cooked sausage, and stir to combine. Bring to a simmer, then reduce to medium-low, cover and simmer for another 15-20 minutes ( until potatoes are fork tender).
Taste and season with salt and pepper as needed.
