Parmesan Crusted Turnips

A great way to use a vegetable in a new way. These measurements are loose, as you just need enough salt, pepper and parmesan to coat the turnips.
Ingredients
Small to Medium Turnips, peeled
Salt
1-2 tbsps Olive Oil
1-2 garlic cloves, minced
Parmesan cheese ( for 4-5 turnips you could use about ½ cup)
Directions
Place peeled turnips in a pot of salted water. Water should cover turnips. Bring to a boil and cook for 20-30 mins, or until turnips can be pierced easily with a fork. Drain, and let cool for a few minutes.
Preheat oven to 350.
Place cooked turnips on a clean kitchen towel. Using a spatula or bottom of a cup, gently press down the turnips to flatten them ( until about ½” thick). Let them dry for about 10 minutes, flip to a dry part of the towel, and continue to dry for another 10 minutes.
Combine garlic, olive oil and salt to taste in a small bowl.
Line baking sheet with parchment paper and place flattened turnips on the sheet. Brush turnips with olive oil mixture, sprinkle with parmesan cheese. Gently press cheese onto turnip.
Carefully flip the turnip over, repeat olive oil and parmesan cheese process.
Bake for 20-25 minutes, until cheese starts to brown. Flip each turnip over and bake an additional 10-15 minutes.
