Farm fresh eggplants are creamy and non-bitter when cooked. We love these for a simple, quick weeknight side dish.
Preheat oven to 450
Slice eggplant lengthwise to ¼-½” thickness
Drizzle a light layer of oil on a baking sheet. Place eggplant in a single layer and lightly oil eggplants. Sprinkle seasoning, salt and pepper evenly over both sides of eggplant.
Bake for 15-20 minutes, until soft and lightly brown, flipping halfway through the baking time.
