This recipe pairs great with any meat and is a wonderfully easy recipe to highlight seasonal farm fresh goodies. Our CSA members have been receiving wonderful oyster mushrooms, but any mushroom does really well in this dish. Oyster, shiitake, lions mane & chanterelles are our favorites.
Roasted Potatoes and Mushrooms

This side dish truly highlights cooler seasonal produce. This simple pairing hihglights farm fresh flavor, and it is a great side dish to any protein.
1 lb of potatoes; washed, peeled and cut into 1/2" chunks
1 share (3-3.50 oz) of oyster mushrooms, cut off from the main cluster. Then cut off about half of each stem, these can be tough and saved to flavor soups. Roughly cut caps into equal sizes
Two cloves of garlic
1 tbsp of olive oil
Salt and pepper to taste
2 tsps of Duncan Farms Italian Seasoning, any italian seasoning or plain thyme can work as a replacement
Directions
Preheat oven to 375. Toss potatoes, mushrooms, garlic, and olive oil together gently with hands.
Place on a baking sheet in a single layer and roast until potatoes are tender, about 25-30 minutes. Toss veggies halfway through cook time.
