Shiitake Mushroom Rice

A quick weeknight meal, this rice dish is simple and delicious.
Ingredients

1 tbsp of butter

1 3.5oz container of shiitake mushrooms, stems removed and sliced
1 clove of garlic, minced
1 green onion, chopped
2 cups of chicken broth
1 cup of uncooked rice
salt and pepper to taste
Directions
In a saucepan over high heat add sliced mushrooms. Cook mushrooms until liquid has evaporated and turn down heat to medium-high. Add butter, green onions and garlic and cook for another 2-3 minutes, or until garlic starts to soften.
Stir in chicken broth and rice. Season with salt and pepper, cover with a lid and bring to a simmer. Reduce heat and allow to simmer for 20 minutes or until liquid is gone and rice is cooked.
