With the first official day of fall behind us, what better way to celebrate the season than with an easy slow cooked, hearty meal.
Southern Comfort Slow Cooker Beef Tips
Beef tips and gravy is an old fashioned southern comfort food. By cooking it in a slow cooker, the meat becomes extra tender.
½ lb of sliced mushrooms
1 small onion, halved and sliced thin
1lb of Duncan Farms Beef Tips
½ tsp salt
¼ tsp pepper
2 tsp olive oil
⅓ cup red wine or substitute with beef broth
2 cups of beef broth
1 tbsp of Worcestershire sauce
2 tbsps of cornstarch
¼ cup cold water
Place mushrooms and onion in a slow cooker while you brown the meat.
Heat 1 tsp of oil over medium high heat in a skillet, brown meat in batches, using more oil if necessary, until all the meat is browned.
Add wine ( or the beef broth substitution) to skillet, stirring to loosen brown bits from the pan. Add the beef broth and Worcestershire sauce. Pour over meat, onions and mushrooms in slow cooker.
Cook covered, on low for 6-8 hours or until meat is tender.
To finish: in a small bowl add cornstarch and water to bowl and whisk until smooth. Gradually stir this into the slow cooker. Cook on high until thickened, about 15-30 minutes.
Serve with mashed potatoes, egg noodles or rice!
