St Patrick's Day Meal

With St Patrick's Day last week we thought what better way to celebrate than with farm fresh food! Irish bangers are a sausage usually made with pork and mild spices. We have taken our pasture raised pork bratwurst with cheese and turned it into this hearty dish.
Ingredients

1 package of Duncan Farms Pork Bratwurst with Cheese

1/2 lb of red skinned potatoes, sliced thinly into rounds
2 tablespoons of olive oil
1 onion, thinly sliced
2 cups of shredded cabbage
3 carrots, cut into 1/2" slices
1 1/2 cups chicken broth
1 teaspoon of thyme
1/2 teaspoon salt
1/4 teaspoon of black pepper
Directions
In a skillet with a tight fitting lid heat your olive oil over medium high heat.
Add sausages and cook, turning them so all sides brown. Transfer the cooked sausages to a plate.
Layer half the onion, then half the potatoes, then half the cabbage in the bottom of the pan. Repeat this step with the remainder of the onion, potato and cabbage.
Add carrots, thyme and 3/4 cup of broth over the veggies and simmer for 10 minutes with the lid on.
Add salt and pepper and nestle the bratwurst into the veggies and add remaining broth. Cover and cook for another 10-15 minutes, or until potatoes and carrots are very soft.
Remove sausages and cut into chunks, return them to the pan and serve.
Sprinkle each serving with pea shoot microgreens for added flavor and crunch.
