Stuffed Chicken Breast
Pasture raised chicken and bacon make this stuffed chicken breast recipe a stand-out for weeknight meals.
Bacon and Greens Stuffed Chicken Breast
1 Package of Duncan Farms Chicken Breast
4 slices of Duncan Farms Bacon; cooked and chopped
1 cup of chopped greens (kale, collard or spinach)
1/2 cup of shredded cheddar cheese
1/2 tsp of garlic powder
1/4 tsp of smoked paprika
1 Duncan Farms Pasture Raised Chicken Eggs
1/2 cup of bread crumbs
4 tbsp of olive oil
Preheat oven to 375.
Pound chicken breast until they are even thickness--around 1" thick.
In a large skillet heat 2 tbsp of oil over medium heat and cook your green of choice until wilty ( about 5-7 minutes).
In a plate combine 1/4 cup of shredded cheese, garlic powder, smoked paprika, and bread crumbs.
Crack the egg into a shallow dish and whisk it until combined.
When the kale is done cooking, mix it together with with the rest of the cheese and all of the bacon.
Spread this mixture on one half of the chicken breast, and fold the other half over. Secure it with a toothpick.
Dip the chicken breast into the whisked egg, and dredge the chicken through the bread crumb and cheese mixture.
In a skillet use the remaining olive oil, and put over medium heat. Saute the chicken for 2 minutes on each side, just to brown the coating.
Place on baking sheet and bake for an additional 10-15 minutes, or until fully cooked ( depends on thickness you pounded them out to).
