Green garlic is just immature garlic, but is a hidden gem in the farm/food world. It is milder and less spicy than mature garlic cloves and tastes more like an onion. Often mistaken for leeks or an overgrown scallion use green garlic just like you would onion or garlic. Simply trim off the root ends and any tough part of the green leaves. Chop or slice the white and light green leaves and the first few inches of the dark green leaves to sautee.
Best stored wrapped in a damp paper towel in a bag in your fridge.
