Collection: Roasted Potatoes and Mushrooms Recipe

  • 1 lb of potatoes; washed, peeled and cut into 1/2" chunks
  • 1 share of oyster mushrooms, cut off from the main cluster. Then cut off about half of each stem, these can be tough and saved to flavor soups. Roughly cut caps into equal sizes
  • Two cloves of garlic 
  • 1 tbsp of olive oil
  • Salt and pepper to taste 
  • 2 tsps of Duncan Farms Italian Seasoning, any Italian seasoning or plain thyme can work as a replacement 


  • Preheat oven to 375. Toss potatoes, mushrooms, garlic, and olive oil together gently with hands. 
  • Place on a baking sheet in a single layer and roast until potatoes are tender, about 25-30 minutes. Toss veggies halfway through cook time.
