Cheesy Chicken & Broccoli Bites

This recipe is a great way to use broccoli, especially for those who might be a picky eater. It can used as an appetizer, a full meal or turned into meatballs. 


1lb of Duncan Farms Ground Chicken
1 tablespoon of Duncan Farms Minced Garlic
1 Duncan Farms Egg
3/4 cup of breadcrumbs, we prefer panko
4-5 green onions, minced
1 Bunch of Duncan Farms Broccoli, precooked and finely chopped
1 1/2 cups of shredded mozzarella 
Salt and Pepper to taste 
Oil to drizzle


Cut broccoli into florets and put a pot of water on to boil. Once water is boiled add broccoli florets and boil for 3-4 minutes. Take out of boiling water and cool using cold water. Place broccoli on paper towels to dry, and chop finely. 
Preheat oven to 400.
Line a baking tray with parchment paper. 
Combine chicken, garlic, egg, breadcrumbs, green onion, cheese and salt and pepper. 
Once combined, use about 1/4 cup to make little patties and place on parchment lined baking sheet. 
Drizzle some oil over the patties and bake for 15 minutes. 
Flip over and cook for another 10 minutes, or until brown and crispy.
