PROTEINS THIS WEEK
What Makes Our Pork World Class
If you missed our previous newsletter, or are new to our CSA, Jess our herdswoman highlighted what makes our pork different than what you find elsewhere.
Here is a great link to some of the quick facts about our pork. Click Here

You will receive one dozen pasture raised eggs. Pasture-raised means they are free to roam and forage for grass and bugs, and are supplemented with a balanced feed for a robust diet. Compared to factory eggs, pasture-raised eggs have more vitamin A, omega-3 fatty acids, and vitamin E.
You will receive one package of our world class breakfast sausage links. (1lb)
In our efforts to supply you with nutritious and healthy food, we have asked our processor to eliminate the sugar that is usually added to ground pork sausage. This mix is free of MSG & sugar, and has simple ingredients for a mildly flavored sausage link. Simple ingredients for amazing food!
Our pork is pasture & forest raised, on a supplemental diet free of corn, soy and GMO's. Pastures are free of pesticides and fertilizers and our pigs are free of medication.
We hope you took the time today to read our newsletter that highlights what makes our pork world class
You will receive one package of our world class ground pork (1lb) . Our ground pork is forest and pasture raised, naturally rich in vitamin D3 and has a great balance of omega 3 & 6.
Rich in flavor, try subbing it in any meal to replace ground beef. Ground pork adds depth of flavor to almost any dish, like this ground pork bolognese pasta sauce.
DUNCAN FARMS SUSTAINABLE BEESWAX FOOD WRAPS
As part of our sustainability efforts we have always tried to reduce waste in our bags where we can. Instead of plastic pints/clamshells we use a recycled, biodegradable paper container. These are recyclable AND will biodegrade in a compost pile in a few weeks, unlike unrecyclable plastic clamshells. Instead of leaving cardboard boxes or bags at your delivery, we ask that you help reduce waste by providing a cooler for your food to be placed into. Every decision we make, we keep the "end of life" of our products in mind.
As part of our efforts, Lauren has crafted an amazing beeswax food wrap to help reduce the need for single-use plastics, like saran wrap, in our homes.
Made using cotton, a fabric that will break down EVEN in a landfill, organic beeswax and pine rosin, these food wraps are great for covering snacks, sandwiches, bowls, bread and more.
Use the warmth of your hands to shape the wrap around your food/item, creating a protective, breathable seal. Wash using cold, soapy water. With regular use you can expect to use these for 6-12 months with proper care. At the end of their use, they can be composted or used as a natural fire-starter.
DIY A SNACK POUCH USING A BEESWAX WRAP
You can make a pouch to replace ziptop plastic bags. Great for sandwiches, crackers, carrots and more!
- Lay flat one 12x12 wrap.
- Depending on the snack, fold the bottom up towards the top, leaving at least 1" to fold over as a "lip".
- Fold over edges and press to seal to create a pouch.
- Fold over the edges again, and press to seal to create a sturdy seam.
- You now have a pouch to fill with your favorite snack or food!
- Fold over the top lip and press to seal. Once you are done using this pouch, unfold and wash with cold/soapy water and leave out to dry so it's ready to use again and again.

You will receive a combination of any of the following seasonal farm fresh product this week
We are a beyond organic, permaculture farm and availability may change by the time we send you your CSA . We strive to provide you with what we have planned this week, but if something changes, we will upload this change before you receive your CSA. We send out only top quality produce, but due to our zero chemical policy, a little marring may occur on products. These vegetables/fruit are still beautiful and delicious. This week you will recieve scallions, bok choy and a herbes de provence sample seasoning packet.
Fall scallions are such a treat as they grow much thicker in the cool fall weather. Full of vitamin K, the green stalks and white bulb are all edible, just cut off the roots. They have a very mild onion flavor. Leaves can be used as a garnish, but we love chargrilling the whole stalk. They will carmelize and the flavor will mellow and sweeten.
Store in the fridge, place either in a jar with water where the roots are just covered with water OR wrap in a damp towel and place in the crisper drawer.
A wonderfully crunchy and flavorful spring/winter crop Bok Choy is a type of Chinese cabbage. A versaile veggie it can be steamed, stir fryed or broiled.
Best stored in a sealed reusable bag, unwashed, in your fridge.
Herbes De Provence Sample Seasoning Packet
A mixture of 7 different types of organic, fair trade dried herbs containing rosemary, sage and lavender.
Herbes De Provence pairs well with most meats and roasted vegatbles, making it a great winter seasoning mix to have in your home. We love it mixed with our ground pork for this Italian Weddding Soup Recipe.
Sustainable Delivery Policy
As per our policy update, please remember to have a cooler out on the day of your delivery for our drivers to place your CSA items into. This allows us to have less waste each delivery.
OUR TIP: Leave some frozen water bottles in the bottom of you cooler as an easy to use ice pack. This will help keep your goodies as fresh as possible.
