Sourdough Caramelized Onion Patty Melts
An easy and filling weeknight meal, this is a great way to enjoy the sourdough in your CSA this week.
If you would like to add the shiitake mushrooms to this sandwich that are in your CSA this week, it's easy to do. Take off the stems and save them for a soup. Slice and fry the mushroom tops in a pan with no oil at a medium high heat. Once the moisture cooks out, finish them with a tablespoon of butter and layer them in on the onions.
6 tablespoons of butter
1 large onion, thinly sliced
1/2 cup beer
1 teaspoon of thyme
1lb of Duncan Farms Ground Beef
8 slices of sourdough bread
8 slices of Swiss Cheese or enough to cover your bread; we recommend Wright Dairy Cheaha
Salt and Pepper to taste
Optional: 1/2 pint of Duncan Farms Shiitake. Take off the stems and save them for a soup. Slice and fry the mushroom tops in a pan with no oil at a medium high heat. Once the moisture cooks out, finish them with a tablespoon of butter and layer them with the onions when assembling the sandwich.
Melt 2 tablespoons of butter in a skillet over medium, high heat. Add sliced onions and sauté until soft and golden, about 8-10 minutes. Add beer and 1 teaspoon of thyme and boil until the liquid thickens, about 2 minutes. Turn down the heat and stir frequently for another 8-10 minutes.
Form the ground beef into 4 patties and heat a pan over medium heat. Add 2 tablespoons of butter and cook your beef on both sides until well browned. Usually 4-6 minutes per side, depending on your preference.
Assemble sandwiches: slice of bread, slice of swiss, beef, onions, slice of swiss and the second piece of bread.
Melt remaining butter as needed in pan and toast each side of the sandwiches. Serve with a light salad.
